curried kumara carrot and lentil soup
this made-up-this-morning recipe is a variation of a curried kumara soup hubby and i used to make when we were first married (when we used microwaves instead of pressure cookers!!)..
and is dedicated to my friend clare, fellow soup addict.
chop a large onion and gently fry in a little (extra virgin) olive oil and a knob of butter in the pressure cooker. throw in a few cloves of fresh garlic, a teaspoon of curry powder, and a sprinkle of salt and stir..
while it's cooking, peel and roughly chop three large kumara, and three carrots, turn off the heat and add to the pot. add half a packet (250g) lentils. pour boiling water over the lot to cover the vegetables, plus a bit extra (because the lentils soak up a lot of water and ya don't wanna burn it!!).
pop on the lid, screw down tightly and bring to the pressure. when it squeals, (let it go.. eeny meeny miney mo. just kidding) turn right down and cook for 10 - 15 mins, turn off and let cool.
process in blender until smooth and reheat.
ooooooooooooooohhhhhhh.. makes pre-winter days bearable!!

Yum...like the idea of the kumara...but the lentils!!!!!!!!!!...."guys dinners on the floor" sorry neal just ruined it for me!!!...:) xxx
